Ingredients
- 2 salmon fillets (about 6 oz / 170 g each), skin on or off
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh dill or parsley
- Juice and zest of 1 lemon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 bunch asparagus, trimmed
- Lemon wedges, to serve
Instructions
- Pat the salmon dry. Mix the olive oil, garlic, dill, lemon zest, half the lemon juice, salt and pepper, then brush it over the fillets. Let them sit for 10 minutes.
- Heat a grill or grill pan over medium-high heat and oil the grates lightly.
- Grill the salmon 4 to 5 minutes per side, flipping once, until it flakes easily with a fork and reaches 145°F (63°C) inside.
- Toss the asparagus with a little oil and salt and grill for 3 to 4 minutes alongside the fish.
- Finish with the remaining lemon juice and serve with lemon wedges.
Chef's tips
- Don't move the fish for the first 3 minutes. It releases from the grill by itself once it has seared.
- No grill? Roast at 425°F (220°C) for 12 to 14 minutes.
